MINESTRONE SOUP

2 Quarts

3 tbsp.
1/4 lbs

Olive Oil
Hot Italian Sausage
Diced Medium Onion
Garlic, Finely Diced
Medium Leek, Diced
Medium Carrot, Diced
Celery
Summer Squash
Italian Seasoning
Chicken Stock
8oz can Diced Tomato
Corn Starch, dissolved in 1/4 cup water
Cooked Pasta
Salt and Pepper to Taste

 

  1. Add olive oil, sausage, onion and garlic in bottom of soup pot for four minutes
  2. Add leeks, carrots, celery, squash, and continue to sauté for five additional minutes
  3. Add remaining ingredients except for cornstarch and let simmer for 10 minutes
  4. Stir in cornstarch mixture, add any pasta and let simmer for 10 additional minutes
  5. Garnish with fresh chopped spinach and parmesan cheese
