SHRIMP SCAMPI

1/3 Cup

1/4 lb
2 tbsp
16 oz

Olive Oil
Large Peeled Shrimp
Garlic, finely diced
Tomatoes, peeled and diced
White Wine
Butter
Parsley, chopped
Cooked Pasta
Salt and Pepper to taste

 

  1. In a large sauté pan over high heat add oil and shrimp and cook until all sides of shrimp are seared off
  2. Add garlic and tomato and continue sautéing 3 additional minutes
  3. Deglaze pan with wine and let reduce by half
  4. Cook pasta in salted boiling water, drain, and add to shrimp
  5. Add butter, salt, pepper, parsley, and continue to heat, stirring constantly, just until butter is melted
